Tomatoes are an excellent source of dietary fibre, Vitamins A, C and K, potassium, manganese and lycopene, an anti-oxidant that protects cells and fights cancer. Most tomatoes today are picked before fully ripe. They are bred to continue ripening after harvest. Always store your tomatoes at room temperature; once an unripe tomato drops below 12.5ºC, it will notcontinue to ripen.
