Buttercup Squash

An excellent source of vitamin A and beta-carotene, and a very good source of vitamins C and B6, folate, potassium, and fibre, buttercup squash is one of the most nutritious vegetables.  As with all winter squash, buttercup squash is also one of few vegetables that do not lose nutritional quality after picking. Buttercup squash has a sweet and creamy orange flesh and is much sweeter than other winter squashes. It can be baked, mashed, pureed, steamed, simmered, or stuffed and can replace Sweet Potatoes in most recipes.
